Blueberry Muffins

Ingredients:

  • 1⁄2 cup Sweet Best Erythritol
  • 2 1⁄2 cup almond flour
  • 1⁄2 tsp. vanilla extract
  • 3⁄4 cup blueberries
  • 1 1⁄2 tsp. baking powder
  • 1/3 cup almond milk, unsweetened
  • 3 eggs
  • 1⁄4 tsp. salt
  • 1/3 cup coconut oil, solid

Instructions:

  1. Preheat the oven to 350F. Line a cupcake pan with baking paper liners.
  2. Mix the almond flour, baking powder, salt, and sweetener in a bowl.
  3. Heat the coconut oil in a saucepan. Then put it slowly to the mixture of flour when melted.
  4. Then mix the eggs, almond milk, and vanilla into the batter and mix.
  5. Fold the blueberries into the mixture.
  6. Distribute the batter to the muffin cups.
  7. Bake for 20 minutes.
  8. Serve.
